The Nakamata Group provides "delicious" with the finest fish procured by connoisseurs and exceptional shochu that can only be prepared directly by the brewery.

Every morning, we visit the Toyosu Market, where fresh ingredients from all over Japan gather, and carefully select the highest quality ingredients that are indispensable to the Nakamata Group.

This time, we would like to introduce our shop's specialty, "Nodoguro", which is particularly popular among them.

 

Nodoguro is another name for a fish called akamutsu.

Why is the red sea bream with bright red scales called Nodoguro?

As the name suggests, it is said that the throat is black when you look into the mouth of the akamutsu.

The original name "Akamutsu" means red Mutsu,

The name mutsu comes from the word 'mutsukoi', which means 'greasy'.

Even though it's greasy, the high-quality blackthroat seaperch is full of high-quality fat, so it's an easy-to-eat fish that goes well with any cooking method.

The blackthroat seaperch, which has been landed for a long time, was originally not a luxury fish, and was said to be a very cheap and unprofitable fish.

However, one of the reasons was that it was picked up on TV and celebrities mentioned it as a favorite food.

Its deliciousness has become well known to the general public, but since it is not a fish that can be caught all over the country, the price has risen due to the low supply compared to demand.

As a result, it seems that it came to be called a high-class fish both in name and reality.

The average size of a blackthroat seaperch is said to be around 200g.

Nakamata Group's Nodoguro is more than twice as large as 500g.

The reason for this is that the extra-large meat maximizes the concentrated high-quality fat and rich flavor.

The highest grade Kishu Binchotan charcoal is used to grill the highest grade blackthroat seaperch.Binchotan charcoal is said to be extremely difficult to cook, as it is prone to bursting.
