Benihitomi is one of the most fatty of the throatfishes, and has a mild taste with a hint of sweetness.
It is suitable for a variety of cooking methods such as grilled, simmered, sashimi, and shabu-shabu.

In particular, the blackthroat seaperch “Nodoguro” directly shipped from Kami-Tsushima and Kaminoken fishing ports, which we handle, has thicker meat, more fat, and a rich sweetness and flavor than those from other regions.
