The appetizer, available only in the Seasonal Course, is made of Japanese bamboo shoots simmered in Tosa sauce and served with Tosa mabushi, a sauce covered with dried bonito shavings!
Spring bamboo shoots have a sweet taste and you can feel the season!
Another is seasonal fresh fish, such as firefly squid and whitefish, which are purchased on the same day!
