【What is “GENSHIYAKI”?】
GENSHIYAKI is a kind of primitive cooking.
It is Japanese traditional cooking method that burns skewered fish with charcoal fire at the hearth end,
leaving the essential fragrance of the material,
it burns juicy with plenty of infrared effect.
By GENSHIYAKI the texture becomes crispy on the outside and chewy on the inside.

Enjoy superb Nodoguro (Blackthroat Seaperch) dishes in our restaurant.
We only serve a high quality Nodoguro,
caught mainly in the sea of Tsushima in Nagasaki Prefecture.
Also, Nodoguro used in our restaurant is over 500 grams (The average weight of Nodoguro is around 200 grams).
Please enjoy this high-quality fish in a various kinds of cooking styles: grilled,
shabu-shabu, and steamed.
