So, this time, we would like to introduce the excellent dishes from [Nodoguro Nakamata Tsukiji], which offers dishes using the "genshiyaki" cooking method.

 Using traditional cooking methods, the outside is crispy and fragrant, and the meat is soft.

Genshiyaki is a traditional cooking method that has been handed down from ancient Japan.
The best way to grill fish is to take this time and effort.

By charcoal-grilling the fish mouth-down, excess moisture evaporates and the umami of the fish is condensed.
As a result, the outside is crispy and fragrant, and the meat is fluffy and soft.

At our restaurant, we use a large and thick "nodoguro" that weighs more than 300g, while the normal size is said to be around 500g.

Freshly caught in the morning and delivered directly from the fishing port, the finest fresh sea bream is luxuriously grilled and delivered to your table.

By serving it "grilled", you can enjoy the juicy fat nori that can only be produced by a thick blackthroat, and you can enjoy the taste of the meat.
